Industries · Fresh-cut produce

Built for fresh-cut produce, from receiving to recall.

Fresco Flow runs the whole fresh-cut operation on one board: receive, wash, cut, cool, pack, label, and pass the audit. It was built and proven in Ninja Fresco's own production, and it runs the same across one location or a hundred.

From dock to pack

Your process, mapped to the board.

Fresh-cut runs as a sequence, and so does the board. Each step hands off to the next, with the food-safety capture built into the step instead of bolted on after.

Receive

Scan the case label. The supplier lot and pack date come off the barcode.

Wash

Produce washing logged with its readings, on the schedule the buyer expects.

Cut

Each cut runs on a live timer, tagged to the cutter, quantity, and origin.

Cool

Finished bins cool with time out of refrigeration tracked per bin.

Pack

Packagers pull from the active bin and finish the job from their own view.

Label

Print the date, country of origin, and barcode for every package.

Why generic kitchen software falls short

The parts a generic app gets wrong.

A restaurant POS or a prep-list app was not built for perishable produce that moves by the lot. These are the places fresh-cut breaks, and where Fresco Flow is built to hold.

Cooling and shelf life

Bins cool with time out of refrigeration tracked, and the sell-by date is calculated from the prep date, not guessed at the end of the shift.

Country of origin, per lot

Origin is captured at receiving and pinned to the lot, so it is right on every label even when the source changes mid-week.

How labeling works

FSMA 204 traceability

Trace any prepped cup back to its supplier lot in one click, with a 24-hour FDA-sortable export and a written traceability plan.

See the recall trace

The buyer's audit, handled

Cooling, washing, sanitation, and calibration logs run on schedule and flag the second one goes overdue, so the records are ready before anyone asks.

The inspection checklist

Waste and yield

Scratch and waste are captured as they happen on the line, not reconstructed from memory at month-end, so the numbers are real.

A line that speaks every language

The worker board runs in the team's language, so the standard does not get lost in translation between the lead and the line.

The multilingual board

Across every location

One standard, every cutting room.

An operator running many cutting rooms needs them all on the same standard, not the same hope. Fresco Flow gives every location the same board and rolls the whole operation up into one view.

  • Per-location rollout. Stand up one location, then the next, with guided setup and per-location control.
  • One live view. The control room shows every location's activity, queue, and logs as they happen.
  • Scored and ranked. Each site gets a daily food-safety score, so the laggards surface before the buyer finds them.
  • Built to scale. The same platform runs one location or a thousand.
